Topic: Looking for multicultural Thanksgiving recipes

I'm working on a piece about how families incorporate their ethnic culinary traditions into the Thanksgiving meal, with quotes and recipes from people of six distinct ethnic backgrounds. I've got most of the categories covered, but I'm still looking for contributions from people of sub-Saharan African descent and those of Latin American (or Caribbean) descent. If your family has a great African- or Latino-influenced appetizer or veggie dish that you serve on Thanksgiving, please let me know! Feel free to pass on to friends, too.
