Anyone have a book to recommend on writing nonfiction book proposals?

I found "How to Sell, Then Write Your Nonfiction Book" by Blythe Camenson very helpful.

Good luck with your proposal!

I have that, and found it helpful. Also have and liked
How to Write a Book Proposal by Michael Larsen
and Nonfiction Book Proposals Anybody can Write (Revised and Updated) by Elizabeth Lyon and Write the Perfect Book Proposal: 10 That Sold and Why, 2nd Edition by Jeff Herman and Deborah Levine Herman.

All of the above are fairly widely cited. The first and fourth take you through actual case studies. All are good. (I've been reading a bunch in the last 2 years.)

I coach writers through the process of writing a proposal. Before our first meeting, I always suggest they read Jeff and Michael's books. They are the two best IMHO, when used together.
