I've seen all these essays in magazines that are expcerpted from anthologies, but I'm at a loss as to where to find when publishers are looking for submissions....

Calls for anthology submissions (and many other types of content requests) are routinely listed in the classified section at the back of Poets&Writers magazine (pw.org).

The Writer (writermag.com) also lists calls for these and other submissions. Another useful site is Writers Weekly (http://www.writersweekly.com/).

Winning Writers also lists some calls (http://www.winningwriters.com/).

Many magazines run excerpts from books; others will consider submissions if an anthology is planned.

If there's an anthology you'd like to be included in, take a look at the publishing credits at the back, to see where essays were first published.

You might also do a search using the term 'anthology.'
