So, what is the pay structure for these. I know what I get paid for a profile or cover story. Does this vary by pub.?

Have you checked out the personal essay two-part series MediaBistro did in January? A lot of the essays paid between $500-$1000, depending on type, size of publication, of course. Good luck!

In my experience, most publications pay the same word rate for everything -- if they pay a buck a word for features, they'll pay a buck a word for essays.

The rates I was quoted was original essays for magazines. With newspapers, I have sold a lot of reprint essays. I haven't done that for 5 or 10 years, when I was writing a weekly self-syndicated humor column and would send some of the columns out widely to see who would bite. At the time, really low circulation newspapers paid anywhere from $10 to $40, while the big ones paid $75 to $200. This was for 700 word humorous essays.

I've published essays, cover stories and FOB stuff and like dribble says I get the per-word rate each mag pays, no matter what type of story it is.
