As I mentioned last week, I recently read Miller and Paola's book Tell it Slant, which has lots of good tips for teachers and writers of creative nonfiction (and thankfully doesn't spend too much time on that seemingly age-old question "What is creative nonfiction?) The McGraw Hill website features a few bits from the book that can be helpful for teachers (an instructor's manual) and students (writing exercises and additional essays) alike.
