Job Purpose Assists Dietary Manager with planning, organizing, developing and directing the operation of the Dietary Department in accordance with current federal, state, and local regulations governing our nursing center, and as may be directed by the Dietary Manager, so that nutritional food services are provided on a daily basis and that the Dietary Department is maintained in a clean, safe, and sanitary manner.
Key Responsibilities
Interview, at admission and as needed, patients/families to obtain diet history, assessment, likes and dislikes.
Complete appropriate clinical record documentation (progress notes, etc.).
Assess and document nutritional needs of each patient in accordance with assessment and care plan.
Review regular and therapeutic diets and menus to ensure they are served accordingly.
Provide counseling regarding dietary preferences, appetite, food habits and menus.
Document cultural backgrounds that may affect food consumption.
Record freezer and walk‑in refrigerator temperatures in accordance with established procedures.
Check stock levels and place stock appropriately.
Order food and supplies according to established method.
Store cleaning materials appropriately.
Supervise tray line service.
Process diet orders accurately.
Make menu substitutions and record them in accordance with procedural guidelines.
Properly store leftovers/opened food.
Serve nourishment in accordance with procedural guidelines.
Make coffee and teas as requested.
Follow procedures for serving partner meals.
Supervise cleaning of kitchen equipment and units.
Operate dish machine and garbage disposal, blender, mixer, steamer, meat slicer, coffee and tea maker.
Use standardized recipes and appropriate serving equipment.
Check and record water temperature and validate sanitation procedures.
Check chemical levels and replace inventory as needed.
Minimum Education Required A high school diploma or its equivalent. A graduate of an accredited course in Dietetic training approved by the American Dietic Association.
Minimum Experience Required Two (2) years in a supervisory capacity in a hospital, skilled nursing care center, or other related medical center. Training in cost control, food management, diet therapy, etc.
