What You Will Do
Provide individual nutrition counseling to students on topics such as healthy eating, sports nutrition, affordable food choices, meal planning, special diets, food allergies, disease prevention, and weight management.
Offer support and guidance to students with disordered eating behaviors, working closely with campus medical and mental health providers. Maintain accurate records of counseling sessions, program evaluations, and educational outreach.
Develop and deliver engaging nutrition workshops, cooking demonstrations, and educational materials for the SIUE campus community. Participate in health fairs, campus events, and wellness initiatives to promote nutrition awareness and healthy lifestyle choices.
Consult with dining services to ensure the availability of nutritious and accommodating food options in campus dining.
Provide support for nutrition‑related policies and initiatives on campus, working with faculty, staff, and student organizations. Serve as preceptor for SIUE graduate students in nutrition and dietetics.
Minimum Acceptable Qualifications
Current
Registered Dietitian Nutritionist licensure from the Illinois Department of Financial and Professional Regulations AND current registration from the Commission on Dietetic Registration (CDR) for the Academy of Nutrition and Dietetics.
Master’s degree in a specialty area related to Nutrition and Dietetics.
Four (4) years (48 months) of professional experience as a Registered Dietitian (RD) or Registered Dietitian Nutritionist (RDN).
Current
certification in an area of specialization inherent to the position.
Preferred Qualifications
Previous experience in nutrition counseling and wellness programming.
Experience collaborating with medical and behavioral health professionals.
Experience and/or additional specialty training in disordered eating behaviors or body image concerns.
Experience with sports nutrition, including providing guidance for student‑athletes on performance, recovery, and dietary strategies.

Illinois Residency Requirement Pursuant to the State Universities Civil Service System, out‑of‑state candidates must establish Illinois residency within 180 calendar days of the start date for this position.
