Sage Restaurant Concepts aims to craft exceptional experiences that forge a bond with guests, enrich our community, and empower our people. The 3,000‑square‑foot location is on the 3rd floor of the Canopy by Hilton Hotel at 940 Rose Avenue, Bethesda, offering 138 seats, a 14‑seat private dining room, and a 23‑seat patio bar.
Responsibilities
Check all items against recipe cards, verify that use records are followed for all items served, and ensure food is presented in an efficient, quality manner.
Monitor the line setup before all meal functions to ensure maximum efficiency during meal periods.
Monitor equipment maintenance and enforce the kitchen "clean as you go" policy to ensure strict adherence.
Prepare food of consistent quality following recipe cards and production and portion standards.
Start food items that are prepared ahead of time, making sure not to prepare more than estimated needs.
Date all food containers and rotate as per SOP, keeping all perishables at proper temperatures.
Check pars for shift use, determine necessary preparation, freezer pull, and line setup.
Note any out‑of‑stock items or possible shortages.
Assist in keeping the buffet stocked.
Return all food items not used on the next shift to designated storage areas, covering and dating all perishables.
Assist in setting up plans and actions to correct any food cost problems; control food waste, loss, and usage per SOP.
Qualifications
Education / Formal Training
– High school education or equivalent.
Experience
– One to two full years in a related kitchen position with this company or another organization.
Knowledge / Skills
– Knowledge of cooking practices and kitchen procedures needed to perform non‑repetitive analytical work.
Physical Demands & Environment
Lifting/pushing/pulling/carrying food cases and equipment up to 70 lbs. (75% of the time).
Periodic climbing required.
Bending of knees necessary when using the lower oven for cooking, 5‑10 times a day.
Mobility – full range of mobility, able to travel 30‑50 feet regularly.
Continuous standing during preparation, service, or expediting, usually all day.
Must hear equipment timers and communicate with other staff.
Must see that product is prepared properly.
Must follow verbal or written instructions and communicate verbally and in writing.
Environment – Inside (95%) for 8 hrs; front‑line temperatures can reach over 100°F; freezer temperatures can be -10°F.
