Global Key Responsibilities

Manage all onboard culinary operations, ensuring menus are executed to company standards. Monitor product quality, conduct tasting panels, and inspect mise-en-place. Resolve passenger complaints regarding menus promptly and effectively. Maintain professional appearance and visibility in all food outlets and public areas. Ensure menu options accommodate guests with dietary restrictions. Exceed Food & Beverage division targets, minimize friction points, and prevent surprises. Use Princess tools & systems to ensure proper food delivery, production, and quality. Assist in planning and provisioning to prevent shortages and reduce waste. Communicate rotational requests timely to shore-based teams. Direct provisioning and inventory management for efficiency and cost control. Collaborate with relevant departments to meet budget and quality standards. Inspect provisions and conduct yield testing regularly. Mentor culinary staff through coaching, training, and performance appraisals. Communicate updates and strategies to the culinary team effectively. Oversee sanitation standards and equipment maintenance. Ensure compliance with health and safety standards. Skills, Knowledge & Expertise

Degree in Culinary Arts or equivalent apprenticeship. Minimum ten years in large-scale culinary operations, with at least three as an Executive Chef. Extensive knowledge of international cuisines and techniques. Leadership and training skills under pressure. Fluent in English, verbal and written. Strong background in F&B operations management, including cost control and staff development. Commitment to exceptional guest service. Excellent communication and interpersonal skills.
