About The Role We are seeking a dedicated Junior Pastry Sous Chef with strong passion for culinary ability, a creative eye for presentation, and a disciplined work ethic. The ideal candidate has professional pastry experience, thrives in a precise and high‑intensity kitchen, and takes pride in maintaining Marea’s standards for desserts, bread, and plated presentations. You’ll have the opportunity to learn from a seasoned pastry leadership team and grow within one of New York’s most respected culinary programs.
Responsibilities
Prepare and execute all assigned pastry menu items with accuracy, consistency, and timeliness
Assist in the production of desserts, breads, chocolates, and other pastry elements for service and private events
Support daily service, inventory, and restocking to maintain readiness throughout service
Ensure all pastry items meet Marea’s quality, portioning, and presentation standards
Maintain cleanliness and organization in pastry areas according to DOH and internal standards
Collaborate with pastry and savory teams to ensure smooth service flow
Assist with seasonal menu development and tastings when directed by the Pastry Chef
Follow all safety and sanitation guidelines while upholding a positive and professional attitude
Special Requirements
Ability to work quickly and efficiently in a high‑volume, high‑end environment
Must be able to lift, carry, or move up to 50 lbs and stand for extended periods (8–10 hour shifts)
Comfortable working in varying kitchen temperatures (hotline, pastry area, walk‑ins, etc.)
Ability to bend, reach, and walk up and down stairs as required
Punctuality, professionalism, and adherence to Marea’s uniform and hygiene standards are required
Qualifications
Minimum 3‑4 years of professional pastry experience is a must.
Strong knowledge of classic pastry techniques and modern plating styles
Familiarity with doughs, custards, mousses, and dessert garnishes
Ability to multitask and prioritize under pressure while maintaining a clean station
Culinary or pastry degree a plus, but not required
Strong attention to detail and a genuine passion for pastry and hospitality
Flexible availability for AM/PM shifts, weekends, and holidays
