Led by acclaimed Chef David Gussin, our kitchen values creativity, precision, and a strong sense of team. We are seeking a passionate, driven Chef de Cuisine to lead our back‑of‑house operations and help shape the next chapter of our story.
Position Overview: The Chef de Cuisine is responsible for the day‑to‑day culinary operations of Prose, including overseeing prep and line staff, managing inventory and food cost, executing consistent service, and contributing to seasonal menu development alongside the Executive Chef. This is a hands‑on leadership position with room for creative expression and professional growth.
Key Responsibilities:
Lead kitchen team through prep, service, and close with discipline and focus
Maintain high standards of cleanliness, safety, and organization
Uphold and enforce recipes, specs, and plating standards
Monitor food and labor cost; track waste and efficiency
Hire, train, and mentor BOH team members
Collaborate on new dishes and seasonal changes
Ensure compliance with health department regulations
Requirements:
Minimum 5 years of kitchen experience, 2+ in a leadership role
Strong technical skills and understanding of modern American cuisine
Calm, clear communicator with a “lead by example” style
Ability to manage volume without sacrificing quality
Familiarity with inventory systems and ordering platforms
ServSafe Certification or equivalent (or ability to obtain)
Compensation & Benefits:
