Under direct supervision of the Room Chef and F&B Back of the House Intern, the Kitchen Steward Lead directs kitchen stewarding operations and staff across the main kitchen, all venues, bake shop, employee dining room, and banquet areas. Responsibilities include maintaining cleanliness and sanitation in all food production areas, ensuring sufficient equipment for outlets, guiding and leading stewarding staff, and overseeing stewarding and kitchen maintenance operations.

Essential Duties & Responsibilities

Ensures compliance with all Tohono O'odham Gaming Enterprise (TOGE) policies and procedures, including Internal Controls (ICs).

Leads the stewarding functions in all kitchen areas, promoting cleanliness, sanitation and compliance with health regulations.

Sets up workstations, cleans and stores dishes, fills dish machines, maintains chemical levels, manages cooler and freezer organization.

Transfers food product and equipment between kitchen areas and maintains efficient traffic patterns.

Trains Kitchen Stewards on safety and sanitation issues; informs management of hazardous situations and emergencies.

Ensures kitchen equipment is prepared and operational for the following shift.

Coordinates preventive maintenance and repairs with Room Chef and F&B Back of the House Intern.

Communicates needs to supervisors to maintain par stocks of all materials and equipment.

Promotes teamwork and quality service through daily communication with Food & Beverage Leadership and other departments.

Assists with other duties as needed (e.g., food dish-up, set-ups).

Attends training meetings.

Provides coaching and guidance to Kitchen Stewards on daily tasks and cleaning schedules.

Supports on‑brand service behaviors to ensure guest satisfaction and retention.

Provides information to subordinates via telephone, written form, e‑mail, or in person.

Works to meet or exceed goals set by Room Chef and F&B Back of the House Intern.

Encourages and builds mutual trust, respect, and cooperation among team members.

Performs duties in another team member's absence or determines replacements.

Treats team members fairly and equitably.

Ensures compliance with food handling and sanitation standards, and follows proper handling and temperature standards.

Improves service by communicating guest needs and providing guidance.

Leads and trains Kitchen Stewards in equipment maintenance and sanitation.

Demonstrates new techniques and equipment.

Demonstrates Desert Diamond Casino On Brand attitude toward team members and guests.

Supports and reinforces Desert Diamond Casino’s Spirit of Service standards.

Models Enterprise standards and leads by example.

Job Requirements Minimum Qualifications Education and Experience: High School Diploma or GED; plus three (3) years of steward/kitchen experience. Experience in a large multi‑outlet casino, hotel, or resort is preferred. Must not have felony, theft, or stealing convictions. Must be 18 years of age or older. Must pass a pre‑employment drug/alcohol screen, background investigation, and obtain a gaming license. Must hold a Food Handlers card and be able to obtain TIPS certification.

Knowledge, Abilities, Skills, and Certifications

Skill in leading a diverse, demanding, multi‑lingual workforce.

Knowledge of maintenance and care of culinary facilities, equipment, supplies, and materials.

Knowledge of FDA health code and application.

Knowledge of cleaning and sanitation best practices for hotels and restaurants.

Knowledge of scheduling techniques and labor cost control.

Ability to oversee and provide leadership to multiple venues.

Ability to maintain open, positive two‑way communication with Food & Beverage Leadership.

Ability to monitor and maintain quality control and safety standards.

Effective communication in English, verbally and in writing.

Ability to work in a busy, fast‑paced environment and maintain professional appearance.

Ability to work well under pressure and make decisions in high‑stress situations.

Basic computer skills, including Microsoft Office.

Physical Demands Regular standing, walking, reaching, talking, hearing, occasional sitting, stooping, kneeling, crouching, crawling, and lifting or moving up to 50 pounds.

Work Environment Work is performed in the casino kitchen area, exposed to heat, fumes, steam, secondhand smoke, and high noise levels. Work may require evenings, graveyards, holidays, weekends, extended hours, and irregular shifts.
