Position Overview

We are a everything-from-scratch ramen shop where everything is made in-house — broths, noodles, tare, oils, and toppings. This is not an ordinary “heat up the prepackaged noodles and sauces” ramen shop. Responsibilities

Service (During Operations)

Prepare and assemble ramen during service Cook noodles with proper timing and texture control Manage broth temperature and consistency Accurately portion tare, aromatic oils, and toppings Plate and serve ramen with attention to detail and speed Communicate clearly with teammates during busy services

Prep Work (From Scratch)

Assist with broth preparation

Preparing bones Vegetable and dried ingredient prep

Prepare tare, aromatic oils, and toppings

Chashu (braised pork) Ajitama (marinated eggs) Menma, garnishes, and other components

Daily prep focused on freshness and quality — zero pre-made products

Quality & Sanitation

Maintain a clean and organized workstation Follow proper food safety, labeling, and storage procedures Uphold kitchen standards at all times

Team & Growth

Learn and execute the chef’s recipes and techniques accurately Stay calm and focused in a fast-paced environment Assist with limited-time and seasonal ramen (experience-dependent) Grow as a cook through hands-on, from-scratch cooking

Ideal Candidate

Passionate about cooking and learning technique Interested in from-scratch food and craftsmanship Works well in a fast-paced, team-oriented kitchen Physically able to stand for long periods and handle kitchen work Long-term interest in improving as a cook or chef Big love for ramen

Experience

Kitchen experience preferred but not required Ramen experience not required Training provided Culinary curiosity and work ethic are essential

Important Note (Sets Expectations Clearly)

This is not a “heat up premade” ramen shop. Our line cooks participate in real cooking — from scratch-made broths, noodles, tare, and toppings — and are expected to care about technique, consistency, and quality.
