Overview
The Director of Food and Beverage position is responsible for all food and beverage production while servicing the food outlets, bars, vending, catering, and special events. Including but not limited to planning and implementing budgets, recruitment, training, supervising, developing effective and creative menus in an amusement environment, managing payroll and food and alcohol costs. Lastly, this role is responsible for excellent guest service by delivering a quality food and beverage experience from a friendly team. Job Responsibilities
Implements and plans effective orientation and training for new staff, implements new policies and procedures, and professional development activities for experienced staff. Inspects to ensure that all safety, sanitation, energy management, preventive maintenance, and other standards are consistently met. Ensures that all standard operating procedures for revenue and cost control are in place and consistently utilized. Ensures that all legal requirements are consistently adhered to, including wage and hour and federal, state, and/or local laws pertaining to alcoholic beverages and food safety and sanitation. Monitors purchasing and receiving procedures for products and supplies to ensure proper quantity, quality, and price for all purchases, as well as the receiving and storage of the same. Reviews new techniques for food preparation and presentation in a manner and variety to maximize guest satisfaction and to minimize food costs. Addresses clients' and guests' complaints and helps assure the highest level of guest satisfaction. Assists in planning and implementing procedures for special events, banquets, and picnic functions. Maintains the appearance, upkeep, and cleanliness of all food and beverage equipment and facilities. Food and Beverage Inventory - Manages physical inventory verification and provides updated information to the accounting department, ensures proper inventory controls, and records inventory monthly. Maintains records of special events, house counts, food covers, and daily business volumes. Audits and approves weekly payroll. Works with the CEO and General Manager on remodeling, refurbishment, and other design enhancements applicable to the food and beverage service. Oversees the implementation of the liquor license addition to the park throughout the different park departments. Requirements
Must be dependable and willing to work days, nights, weekends, and holidays (excluding Thanksgiving & Christmas) Must demonstrate the ability to work under pressure while multitasking, have strong organizational skills, and be able to pay attention to detail Knowledge of legislation and regulations relating to Food & Beverage Minimum 5 years of food and beverage management experience Experience managing multiple food locations required, arena or venue experience preferred Tips certified preferred; Liquor management background & ABC knowledge a must Must be able to communicate accurately and professionally with managers, teammates, and guests Must have a good sense of balance and be able to bend, kneel, sit, crouch, or crawl frequently Must regularly lift and/or move up to fifty pounds and occasionally up to one hundred pounds Benefits
