
Director, Food Service

Overview
Responsible for the overall operation of the cafeteria and all food service at the HTC main campus in Skokie and more limited food service at HTC’s Blitstein Institute (Chicago) and Fargo (Skokie) campuses and other events off-campus. This position owns final responsibility for ensuring that HTC provides well-balanced, nutritious, adequately-portioned, enjoyable meals to our students and staff.
Responsibilities JOB RESPONSIBILTIES:
Oversee day-to-day operation of HTC’s food service (three meals a day, seven days per week) for school year and Yeshiva HaKayitz overnight camp, working a primary schedule per the following general hours:
Mondays – Thursdays: 9 AM – 5 PM
Fridays:/Saturdays: “Out” Shabbos: Friday 9 AM – 2 PM “In” Shabbos: Friday 9 AM – 2 PM, dinner, and Shabbos (Sat.) lunch
Help hire and manage food service staff
Plan menu, order food and supplies, and maintain inventory records
Serve as lead cook for lunch during the week
Oversee cooking/food preparation of breakfast and dinner; help when needed (especially during Kayitz)
Maintain clean, organized and efficient food service areas
Develop food service budget and monitor expenses to stay within budget; present budget to HTC finance committee during the budget process
Manage interactions with, and inspections by, outside agencies (e.g., Village of Skokie Department of Health); ensure compliance and manage paperwork in a timely and appropriate manner
Enter bills and financial information into Touro’s online Banner platform
Interact with HTC staff and lay leaders as necessary regarding food service planning for special events
Coordinate and provide food service for special events at any HTC campus, or off campus, including but not limited to:
Fundraising and community events, some off campus, including:
Simchas Torah
Shabbos of Chizuk
Lectures
School-related events (FYHS, and Men’s and Women’s Colleges):
Rosh Hashana, Yom Kippur & Shavuos meals
Shabbatons
Parent-Teacher conferences, Open Houses
Student trips
Holiday program meals associated with Rosh Chodesh, Chanukah, Lag B’Omer, Purim etc.
End-of-year events (Siyum, Graduations, etc.)
Special events, including board/staff meetings, visits from outside agency representatives (e.g., JUF), and/or simchas for HTC staff
Qualifications REQUIREMENTS:
High school diploma or higher
5 years of experience in cafeteria and/or food service management
Strong familiarity with the dietary laws of kosher food and knowledge of Orthodox Jewish customs and practices
Experience in a commercial kosher kitchen
Experience in hashgacha a plus
Serv-Safe certification
