Senior Cook – NYC Administration for Children’s Services Salary:

$44,777.00 – $50,598.00

Position Summary The Food and Nutrition Services (FNS) Unit at Crossroads Detention Center seeks a Senior Cook to prepare, serve, and supervise food services for youth and staff. The role requires strict adherence to sanitary codes, meal‑planning regulations, and specialized diet preparation.

Responsibilities

Supervise and train Cooks and Institutional Aides in meal preparation and kitchen activities.

Ensure all food items are ready for each meal in advance of preparation.

Prepare and serve food in compliance with New York City Food Standards, OCFS Regulations, and New York State Child Nutrition requirements.

Coordinate mealtimes, including breakfasts for residents with early appointments and court‑lunch pick‑ups.

Maintain adequate food quantities based on census, staff counts, menu plans, and expected shortages.

Produce special or therapeutic diets as directed, ensuring exact ingredient lists and proper serving procedures.

Enforce all applicable sanitary codes related to meal preparation and food handling.

Document temperature control, food safety, and hold times for all prepared items.

Inspect kitchen equipment daily to verify safe operation, taking corrective actions when necessary.

Complete required paperwork, including food production worksheets and meal count reports.

Inform staff of procedural changes, safety guidelines, and sanitation updates.

Enforce standard conduct, time-keeping, leave policies, and absences.

Evaluate performance of assigned staff.

Minimum Qualifications

Elementary school graduation plus three years of cooking experience; or an equivalent education and/or experience.

Preferred Skills

High school diploma or GED.

5+ years’ experience as a cook in a restaurant or institutional setting.

2+ years’ experience supervising food service/kitchen staff.

Ability to work well under pressure and in a fast‑paced environment.

Excellent written and oral communication skills.

Maintaining professional relationships with clients, co‑workers, and facility staff.

Conducting and assessing inventory.

Delegating tasks while maintaining service speed.

Reading and following standardized recipes.

Strong knowledge of proper food‑handling procedures.

NYC Food Handler’s Certificate or ability to pass the NYCDOH Food Handler’s Certificate Course within 30 days of employment.

Additional Information Section 424‑A of the New York Social Services Law requires agencies with child‑caring responsibilities to confirm whether a candidate has been the subject of a child‑abuse or maltreatment report.

Residency Requirement New York City residency is generally required within 90 days of appointment. Certain City employees who have worked for two continuous years may be eligible to reside in Nassau, Suffolk, Putnam, Westchester, Rockland, or Orange County.
