Job Summary As Executive Chef, you will oversee kitchen operations, ensuring a safe and sanitary environment. You will plan and direct meal preparation in line with company programs and guidelines, maintaining quality standards while managing inventory, staff training, and compliance with health regulations.
Key Responsibilities
Plans regular and modified menus according to established guidelines.
Follows standardized recipes, portioning and presentation standards, completing daily production worksheets and waste log sheets, and tasting meals for quality.
Trains kitchen staff in food preparation, safe handling, equipment operation, food safety, and sanitation based on company and regulatory standards.
Establishes and maintains cleaning and maintenance schedules for equipment, storage, and work areas, ensuring staff compliance.
Manages inventory of food and non‑food supplies to stay within guidelines and assure product availability.
Decides on utilization of leftover food products within company guidelines.
Complies with federal, state and local health and sanitation regulations and department sanitation procedures, evidenced through audits.
Enforces facility, department, and company safety policies, including occurrence reporting.
Participates in departmental meetings, staff development, and professional programs.
Preferred Qualifications
A.S. or equivalent experience.
Minimum of 3–5 years of progressive culinary/kitchen management experience.
Extensive catering experience (plus).
High‑volume, complex food‑service operation experience (highly desirable).
Institutional and batch‑cooking experience.
Hands‑on chef experience (must).
Comprehensive knowledge of food and catering trends focused on quality, production, sanitation, cost control, and presentation.
Computer proficiency: Microsoft Office (Word, Excel, PowerPoint), Outlook, Email, Internet.
ServSafe certification (highly desirable).
