In winter 2023, Le Pristine Tokyo, a restaurant and cafe bar supervised by Sergio Harman, a chef who has earned Michelin stars in Europe for many years, will open at Hotel Toranomon Hills Unbound Collection by Hyatt, which opened in Toranomon Hills. Harman, a Dutch chef and entrepreneur, transformed his parents' restaurant in a small Dutch town into a Michelin three-star restaurant, propelling it to a place among the “World's 50 Best Restaurants” for eight consecutive years. This is the first restaurant in Asia supervised by Harman. Le Pristine Tokyo is the second restaurant in Harman's Le Pristine brand, following the flagship restaurant in Antwerp, Belgium. Located on the first floor of Hotel Toranomon Hills, the restaurant opened with the hotel and offers contemporary European cuisine that combines carefully selected seasonal ingredients from the Zeeland region of the Netherlands and Japan. Building on the success of Harman's restaurant “Le Pristine” in Antwerp, Belgium, which earned a Michelin star in its first year of operation in 2020, the restaurant creates a world of gastronomy that blends the five elements that form the DNA of the restaurant: food, fashion, design, art, and music.
