Nestled in the heart of Panama's historic Casco Antiguo district, Hotel La Compaia is a UNESCO World Heritage Site treasure that has been lovingly restored and reinvented as a living museum of design, architecture, and art. Opened in April 2022, the hotel offers 88 luxurious rooms, 5 unique restaurants, 2 lively bars (including a rooftop bar), and over 16,000 square feet of event space. As the flagship Unbound Collection by Hyatt hotel in Central America and the Caribbean, we pride ourselves on blending history, culture, and exceptional hospitality. As Executive Chef, you will: Lead a talented kitchen team across 5 on-site restaurants, 2 bars, and a robust banqueting operation capable of hosting events for over 400 guests. Oversee the culinary program at Villa Ana, a unique extension of Hotel La Compaia that serves as a portal for art, culture, gastronomy, and entertainment. You will create and execute menus that complement its vibrant offerings and enhance its role as a cultural hub. Design and execute menus that blend local flavors with global culinary trends, celebrating Panama's rich culinary heritage while pushing boundaries. Maintain the highest standards of food quality, consistency, and presentation. Collaborate with ownership and senior management to create unique dining concepts and experiences that align with the hotel's luxury ethos. Drive kitchen operations, including cost control, staff training, and compliance with safety and hygiene standards. We're looking for someone who: Has a proven track record as an Executive Chef or Sous Chef in luxury hotels, fine dining restaurants, or comparable establishments - with the readiness and ambition to step into an Executive Chef role. Is fluent in Spanish or possesses high-level Spanish language skills (fluency preferred). Is passionate about culinary artistry, local ingredients, and delivering memorable guest experiences. Has strong leadership skills and enjoys being on the floor, interacting with guests, and mentoring staff. Is ready to commit to a long-term, transformative journey, with aspirations to grow within our organization.
