The Sushi Chef is responsible for preparing sushi rolls, nigiri, sashimi, and specialty items while upholding Trapper's standards for quality, presentation, and food safety. This role requires excellent knife skills, attention to detail, and the ability to work efficiently during high-volume service. Duties and Responsibilities
Prepare sushi rolls, nigiri, sashimi, and other menu items to company specifications. Maintain ingredient freshness, proper storage, and accurate FIFO rotation. Keep a clean, organized, and sanitized workstation throughout service. Follow all food safety practices and Texas food handling regulations. Collaborate with the kitchen and front-of-house teams to support smooth service. Assist with daily prep, inventory checks, and restocking needs. Demonstrate and uphold all

1–3 years of sushi preparation experience preferred. Strong knife skills and familiarity with sushi preparation techniques. Ability to work quickly, cleanly, and consistently under pressure. Positive attitude and excellent communication with team members. Texas Food Handler Certification (or ability to obtain shortly after hire). Flexible availability including evenings, weekends, and holidays. Physical Demands
Standing for extended periods in a fast-paced kitchen environment. Lifting up to 30 pounds (ingredients, containers, equipment). Repetitive motions including chopping, rolling, and plating. Benefits
