Sous Chef – Remote Luxury Ranch in Wyoming

Responsibilities
Support the Chef in developing and representing all Food, Beverage, and Service functions, creating a culture of continuous learning and training with an emphasis on high quality, fresh ingredients and seasonal techniques.
Interview, hire, train, and manage all culinary staff on a daily basis.
Ensure compliance with local health department regulations, Corporate HACCP and Food Safety SOPs, and federal guidelines.
Organize, oversee, and manage all food‑prep operations during daily service.
Help create menus, recipes, use records, and execute menu implementation plans and timelines.
Maintain kitchen brigade and station assignments following the WLW SOPs and directives.
Support Sales, E.M., and FOH teams in marketing and sales programs.
Execute accounting procedures including F&B checkbook, food checkbook, invoice processing, payroll, monthly inventories, and P&L critiques.
Monitor freshness of foods and ingredients, ensuring adherence to recipes and portion records.
Monitor food‑related expenses and ensure budgeted levels are achieved.
Monitor guest corporate feedback scores and contribute to positive influence on rankings.
Foster a climate of cooperation and respect between coworkers.
Mentor associates for career development and advancement.
Qualifications & Preferred Background
Valid food handler card.
Hands‑on mindset—this is not an office role.
Desire to live and work in a remote, scenic location.
Experience managing kitchen operations in a high‑performance, remote setting.
Strong knowledge of food safety regulations and culinary best practices.
