The opportunity Delaware North Gaming is hiring an Executive Steward to join our team at Southland Casino in West Memphis, Arkansas. As an Executive Steward you will be responsible for leading all stewarding, sanitation, and catering set-up operations across Southland Casino’s food and beverage outlets and work closely with the Executive Chef, team members and leaders to deliver the highest standard of food quality to our guests.

Pay Minimum – Anticipated Maximum Base Salary: $46,100 – $62,200 / year

In addition to base salary, we offer an annual bonus plan based on company and individual performance, or a role-based, uncapped sales incentive plan. What will you do?

Lead, train, schedule, and supervise all stewarding staff across multiple outlets

Manage stewarding support for the Banquets department, including room set-up, breakdown and post event sanitation

Oversee cleaning and sanitation of kitchens, dish rooms, storage areas, banquet spaces and service areas

Maintain chemical handling programs, dilution logs, SDS documentation, and sanitation records

Coordinate with Facilities and Engineering for repairs, preventative maintenance, and replacements

Monitor dish machines, grease systems, trash compactors, floor drains, and sanitation infrastructure

Manage stewarding and catering support inventories, including chemicals, disposables, smallwares, and PPE

Ability to manage labor and control operational costs

Maintain clear communication with the Executive Chef, Culinary Leadership, Banquets, Catering, and Facilities teams

Ensure compliance with all local, state, and federal health department regulations

More about you

Minimum of 5 years of stewarding or sanitation leadership experience in a high-volume environment

Casino, hotel, or large-scale banquet operation experience strongly preferred

ServSafe Food Safety Certification, or ability to obtain upon hire

Knowledge of OSHA safety standards

Chemical handling and sanitation training, or ability to obtain upon hire

Possess strong financial and computer skills, including a working understanding of monitoring and managing budgets

Flexible availability, including nights, weekends, holidays and extended hours

Continued employment contingent upon maintaining required certifications

No degree required

Physical requirements

Ability to stand and walk for extended periods

Ability to lift, push, or pull up to 50 lbs

Ability to work in hot, wet, and physically demanding environments
