Position Overview The Executive Steward is responsible for the overall cleanliness, sanitation, and organizational efficiency of all back-of-house food preparation areas. This role serves as a critical bridge between the Culinary and Banquet departments, ensuring that the heart of the house operates at luxury standards while managing a significant inventory of high-value assets (china, glass, silver, and smallwares).

*For the right culinary candidate, this could be a Banquet Sous Chef who understands Stewarding leadership and could possibly combine the roles.

Key Responsibilities

Departmental Leadership:

Recruit, train, and manage the stewarding team. Create schedules that balance labor costs with the high-demand needs of daily operations and large-scale banquet functions.

Asset & Inventory Management:

Conduct regular inventories of all operating equipment. Track breakage and loss, and manage the procurement of replacements within the departmental budget.

Sanitation & Compliance:

Maintain a "gold standard" of cleanliness. Ensure strict adherence to local health department regulations, HACCP protocols, and internal luxury brand standards.

Banquet Support:

Coordinate with the Banquet Manager and Executive Chef to ensure all plating and service equipment is staged, polished, and ready for high-profile events.

Chemical & Equipment Safety:

Oversee the safe storage and usage of cleaning chemicals. Manage the maintenance of industrial dishwashing machinery and kitchen equipment to prevent downtime.

Sustainability:

Lead the property’s waste management and recycling initiatives, ensuring proper disposal and environmental compliance.

Ideal Candidate Profile

Experience:

3–5 years of supervisory experience in a luxury hotel or high-volume resort environment.

Knowledge:

Deep understanding of health and safety regulations (OSHA, Food Handlers, etc.) and industrial kitchen operations.

Skills:

Strong organizational and budgeting skills. Ability to lead a diverse team in a high-pressure, fast-paced environment.

Tech Savvy:

Proficient in inventory management software and labor scheduling tools.
