$75,000/year
About This Position The Food Service Director plans, directs, and coordinates the activities associated with running a single site, stand‑alone food service operation in a facility with only one kitchen and less than 1,000 inmates/beds. This position oversees the operational and financial responsibilities for the kitchen and supervises an Assistant Food Service Director and/or a team of Food Service Workers and/or Cooks who are involved with the preparation, serving, and clean‑up of food in a secure correctional facility.
Core Responsibilities
Supervise, train, and instruct team members and/or inmates in general food service practices, including preparation, cooking, and serving of food.
Ensure appropriate quantities of food are prepared and served according to facility or site plan.
Hire, orient, train and issue corrective action (when applicable) to team members.
Review and approve payroll on a bi‑weekly basis.
Build and maintain positive connections with clients by regularly communicating, understanding their needs, proactively addressing concerns, and providing excellent service.
Coordinate workflow and assign work to team members.
Ensure all team members are trained and capable of performing job responsibilities safely.
Direct team members to ensure job‑related rules, policies, procedures, and security guidelines are enforced.
Maintain accuracy of inventory, ordering, and reports.
Comply with client contractual obligations and relevant regulations.
Maintain food storage, sanitary environment, and safety standards.
Plan for special events and functions and participate in meetings with assigned customer facility operations staff.
Maintain product service quality standards and produce accurate on‑site reports of daily and monthly financial, production, and activity.
Responsible for state or other inspection of food service operation.
Participate in contract negotiation and renewal process.
Perform other duties as assigned.
Qualifications
High School Diploma or Equivalent; must be at least 18 years of age.
Five years of management or supervisory experience in a food service environment.
ServSafe certification.
Knowledge and experience managing kitchen sanitation and safety standards.
Basic accounting and mathematical ability to complete necessary reports.
Prior institutional food service or restaurant experience is preferred.
