Department Food & Beverage

Reports To Food & Beverage Director

Summary Assist the Food & Beverage Director to ensure that all products meet Ruttger’s quality standards.

Provide a dining experience that exceeds guest expectations and oversee restaurant operations in the absence of the Director.

Take drink and/or food orders from guests or servers, maintain interdepartmental communication, and interact daily with guests and resort staff.

Education and/or Experience

Must be at least 18 years old.

Post‑secondary hospitality management training highly desirable.

Minimum of two (2) years’ previous serving experience required.

Minimum of one (1) year experience in a supervisory position recommended.

Essential Duties

Assist as directed to oversee front‑of‑house operations in the absence of the Food & Beverage Director.

Maintain dining reservation system and update Silverware POS system.

Attend weekly stand‑up and pre‑conference meetings.

Assist the Food & Beverage Director with placing orders for beverages and necessary restaurant supplies.

Estimate the amount of all non‑alcoholic beverages needed and assist with placing orders; checks accuracy and quality of deliveries. Maintain security of all non‑alcoholic beverages.

Supervise server activities, monitor steps of service and serving methods.

Assist with overseeing front‑of‑house operations and resolve customer complaints about food quality and/or service.

Ensure proper cash handling procedures are followed.

Assist the Food & Beverage Director & Events Manager on banquet events, ensuring proper preparation and staffing.

Assign and ensure completeness of all pre‑shift and post‑shift duties.

Ensure the morning and evening buffets are set up timely and to Food & Beverage Director’s expectations.

Ensure buffet units are cleaned after each use.

Assist with cleaning of the restaurant areas to maintain sanitation standards; arrange for maintenance and repair of equipment.

Monitor actions of staff and guests to ensure health and safety standards and liquor laws are followed.

Ensure proper security procedures are followed to protect employees, guests and restaurant assets.

Keep Food & Beverage Director informed of all issues and take prompt corrective action where necessary.

Foster positive working relationships and communication with all departments.

Assist with monthly inventory and the restaurant’s weekly schedule.

Receive and deliver food and/or drink orders from guests or servers.

Greets guests and informs them of specials, menu items, and any menu changes.

Process guest orders to ensure all items are prepared properly and in a timely basis.

Ring food and beverage orders into POS system; process cash and credit card transactions.

Present, open, and pour wine for guests if necessary.

Ensure guests are satisfied with food and service, respond to additional requests, determine when to clear table.

Present bill and collect payment.

Perform all assigned pre‑shift and post‑shift duties.

Stock workstations, bus and turn over tables.

Maintain a clean and sanitary workstation.

Complete daily and weekly cleaning duties.

Ensure good safety practices.

Any other duties as assigned.

Requirements

Must be able to pass Ruttger’s background check.

Stand, walk, sit, kneel; lift, push, pull, reach with arms and hands; move objects weighing up to forty (40) pounds.
