Unicoi State Park & Lodge is seeking a strategic, hands‑on Food & Beverage Director to lead and oversee all food and beverage operations across our property—including our signature restaurants, Smith Creek Tavern and Anna’s Italian, banquet and catering services, and group events.

About the Role As Food & Beverage Director, you will provide strategic direction and operational leadership for all dining outlets and event services across the Lodge. This is a senior leadership role responsible for driving performance, enhancing guest satisfaction, and building a strong, service‑driven culture.

You’ll oversee multiple concepts—each with its own identity—while ensuring consistency, quality, and profitability across the entire F&B operation.

What You’ll Do

Provide overall leadership and direction for all food & beverage operations, including restaurants, bar, catering, and banquets

Lead, develop, and inspire department managers and team members to achieve excellence

Partner with the Executive Chef to design innovative menus and seasonal offerings

Establish and maintain high standards for service, quality, and guest satisfaction

Oversee financial performance including budgeting, forecasting, cost control, and revenue growth

Analyze P&L statements and implement strategies to improve profitability

Manage vendor relationships, purchasing programs, and inventory controls

Ensure full compliance with health, safety, and licensing regulations

Collaborate with other departments to enhance the overall guest experience

Drive a culture of accountability, teamwork, and continuous improvement

What You Bring

Proven leadership experience as a Food & Beverage Director or senior F&B leader in a resort, lodge, or multi‑outlet environment

Strong business acumen with experience managing budgets, P&Ls, and financial performance

Exceptional leadership and team development skills

A guest‑focused mindset with a passion for creating memorable dining experiences

Ability to balance strategic thinking with hands‑on operational execution

Experience overseeing multiple outlets and large‑scale events or banquets
