Job Description
FOOD & BEVERAGE DIRECTOR
MISSION
To coordinate the food service activities of the Bistro, Bar, Market, Poolside Service and Catering/Banquets. To estimate food and beverage costs, and requisition or purchase supplies, equipment, and food and beverages. To confer with food preparation and other personnel from the Bistro, Bar, Market, Poolside and banquet team to plan menus and related activities. Oversee the cleaning and maintenance of Food and Beverage equipment, facilities, and ensure that all health and safety regulations are followed. To hire, train, schedule, and supervise all Food and Beverage staff. Assist in developing marketing strategies and implement advertising and promotional campaigns to increase business. To review financial transactions and monitor budget to ensure efficient operations and to ensure expenditures stay within budget limitations. To work with Catering Sales and Event Managers to coordinate and supervise the execution of all banquet functions, ensuring clients’ specifications are met and functions run smoothly.

SUPERVISES Sous Chef, Food and Beverage Supervisors, Culinary Staff, Bartenders, Servers, Server Assistants, Banquet Servers, Banquet Houseman, Poolside Staff (Servers, Runners, Bartender).
PRIMARY FUNCTIONS
Meet or outperform F&B budgets
Oversee staff hiring, training, scheduling and supervision of all Food and Beverage staff (FOH, BOH, Poolside, Banquets)
Ensure all LSI HR policies and employment practices are followed in all Food and Beverage departments
Regularly meet with food production, Bistro, Bar, Market, Banquet and Poolside personnel to plan menus and related activities, coordinate special events, share information, etc.
Estimate food and beverage needs, and requisition or purchase produce, meats, poultry, fish and seafood, supplies, beverages, and equipment
Develop and execute Food and Beverage social events and programming (Live Entertainment, Wine Tasting Events, Kids Eat Free…etc.)
Receive and check all Food and Beverage orders to ensure accuracy and adherence to specifications
Supervise inventories and estimate food and beverage costs
Supervise the cleaning and maintenance of all Food and Beverage equipment, and arrange for repairs, contracts, and other services
Investigate and resolve any food quality or service complaints
Inspect the Bistro, Bar, Market, banquet rooms, and food receiving, preparation, production, and storage areas to ensure that health and safety regulations are adhered to at all times
Assist in developing marketing strategies for all Food and Beverage outlets, and for implementing advertising and promotional campaigns
Regularly review financial information such as sales and costs, and monitor budget to ensure efficient operations and expense control; take action to correct any deviations from budget
Establish and maintain effective internal controls with all Food and Beverage departments
Approve all booked activities such as banquets and catered events where food and beverage services are required
Maintain a strong relationship with the Event Manager and Sales Managers to facilitate the proper handling of conference and banquet obligations
Review and have a thorough understanding of all function sheets
Maintain an appropriate level of community public affairs involvement
Maintain knowledge of local competition and general industry trends
Be knowledgeable about the duties and responsibilities of all Food and Beverage positions; be able to fill in wherever and whenever needed
Perform annual budget preparation for the Food and Beverage departments
Solicit feedback from customers on a regular basis
Holds and maintains applicable certification requirements such as: CA Food Handler Card, ServSafe Manager, RBS, CPR/AED
