Assistant Executive Steward
CoralTree Hospitality, San Diego, CA, United States
A convention hotel runs on precision, pace, and polish—and none of that happens without a world‑class stewarding operation. We’re looking for an Assistant Executive Steward who understands that behind every flawless banquet, every packed outlet, and every last‑minute turn is a team that keeps the engine running.
This role is equal parts operator, organizer, and culture builder. If you take pride in immaculate kitchens, efficient systems, and leading teams that deliver under pressure, keep reading.
Why This Role Matters The guest may never see your work—but they experience it in every clean plate, every polished glass, and every flawlessly executed event. This is the backbone of the operation, and you’ll be the one holding it steady.
Salary $70,304.00
Enjoy great team perks, including complimentary stays for you and your family, free daily lunch in our employee cafeteria, free parking, a 401(k) retirement plan, and more. For full‑time team members, we also offer comprehensive Medical/Dental/Vision plans and employer‑paid life insurance for added peace of mind.
Responsibilities What You’ll Own
Lead and develop a large stewarding team supporting banquets, multiple outlets, and back‑of‑house operations
Oversee dishwashing, pot washing, kitchen cleaning, waste management, and equipment handling
Ensure health, safety, and sanitation compliance at all times (no exceptions)
Partner closely with Culinary, Banquets, and Engineering to execute seamless events—from intimate meetings to large‑scale conventions
Manage inventory and ordering of chemicals, supplies, and equipment
Build schedules that flex with business levels (and yes, that means thinking three steps ahead)
Maintain and enforce standard operating procedures that actually get followed
Drive efficiency—faster turns, smarter systems, cleaner spaces
Qualifications What You Bring
Proven leadership experience in high‑volume stewarding or kitchen operations, preferably in a hotel or convention environment
Strong knowledge of sanitation standards, safety practices, and equipment handling
Ability to lead diverse teams with clarity, fairness, and accountability
A calm, solutions‑first approach when the pressure spikes (because it will)
Solid organizational skills—this operation doesn’t run on guesswork
Flexibility with schedule, including nights, weekends, and holidays
Bi lingual in Spanish required
What Sets You Apart
You notice what others miss—details matter
You run a tight operation without running over people
You believe systems should make work easier, not harder
You build teams that take pride in the work, even when no one’s watching
