In this role, you will be responsible for all of Desert Mountain’s banquet events set‑up, breakdown, inventory, and storage of all banquet equipment. Collaborate with Chefs and Managers for the successful completion of banquet events while providing our members a world‑class experience. Monitor performance of assigned staff and ensure that all procedures are completed up to department standards.
The ideal candidate will be a team player with a great attitude and strong work ethic. A minimum of two years of related experience in a culinary or stewarding environment with one year of supervisory experience and/or a combination of training and expertise is preferred. Prior kitchen and country club or resort experience is a plus. Must be proficient in Microsoft Office, and be bilingual in Spanish. Must have a valid Driver’s License.

Responsibilities
Execute and remain informed with all Catering function sheets and monitor any changes daily.
Communicate daily with all Chef de Cuisines on activities in the Club and attend Chefs’ meetings as necessary.
Attend weekly catering meetings with the Banquet Chefs to retrieve exact information regarding counts and on‑hand times.
Responsible for the inventory control of all equipment as specified by the Director of Stewarding and for assisting designated managers with adjusting pars accordingly.
Responsible for moving tables, chairs, staging, and any other banquet equipment with proper use of hand trucks, carts, and dollies in a safe manner.
Responsible for setting up banquet rooms exactly as the BEO states: this includes chairs, tables, staging, skirting of tables, buffets, etc.
Supervises the handling, storage, and security of all kitchen and banquet equipment used in events.
Required to pull, deliver, set up, break down, clean, and return all equipment to its proper storage area for all events.
Report all maintenance problems to appropriate personnel by submitting work orders via Limble, software used property‑wide to submit work orders and follow up as necessary.
Research and apply new methods to improve the organization of the Stewarding and Banquet Set‑Up Department, vendor sourcing, product inventory, placement of equipment, and any other departmental needs.
Execute service duties as well as develop and execute training initiatives with procedures for all Stewarding and Banquet Set‑Up positions in accordance with Desert Mountain’s Standards of Excellence.
Assign duties, workstations, and responsibilities to staff and direct their performance with implemented daily and weekly checklists.
Responsible for briefing teammates with the information needed to perform their jobs and duties effectively at the beginning of their shifts.
Inspect the cleanliness, sanitation, organization, and working condition of service areas and workstations including all tools, equipment, and supplies. Rectify deficiencies as needed.
Responsible for all disciplinary action, using the Talent & Culture Department as a resource in establishing the appropriate course of action, to make each teammate successful through coaching and teaching.
Always treat all staff members with dignity and respect, upholding DMC’s policies, and standards.
Creates 100% Guest Satisfaction by providing a “Can Do” attitude and by exceeding Members' expectations. Communicates and demonstrates a “Can Do” attitude to other teammates.
Weekly review of all pull sheets with the Director of Stewarding to identify equipment challenges.
Assist the Director of Stewarding with department scheduling in accordance with business volume, time off requests, and labor cost guidelines.
Assist the Director of Stewarding with any in‑house health inspections.
Assist the Director of Stewarding with daily cleanliness inspections of service areas.
Assist with Paycom and ensure that all teammates are following proper guidelines.
Other duties as assigned by Director of Stewarding.
