About the Role
The Tortillería Clerk produces tortilla products using traditional processes while supporting the department’s goals for quality, freshness, and service. This role prepares masa, fries tortilla products, stocks and rotates items, and provides excellent customer service while maintaining Vallarta’s high standards of food safety and sanitation.
What You’ll Do
Customer Service: Smile, greet, and assist customers with tortilla and specialty product orders.
Production: Prepare masa, fry and cook tortilla products, and ensure consistency in quality, weight, and appearance.
Merchandising: Stock, rotate, and replenish products; keep displays fresh, attractive, and at proper storage temperatures.
Operations: Package, weigh, and label flour and corn tortillas; transport products to and from storage.
Sanitation & Safety: Clean nixtamal tanks, equipment, and work areas; sweep, mop, and follow “clean as you go” practices. Use approved cleaning chemicals and follow MSDS principles.
Compliance: Follow health department regulations, food safety practices, and Vallarta’s Tortillería Safety Program. Ensure weights, measures, and labeling laws are followed.
Teamwork: Assist coworkers, participate in training new employees, and maintain communication with the Tortillería Manager.
Other Duties: Perform additional tasks assigned to support department operations and customer satisfaction.
Physical Requirements
Stand and walk for long periods (6–8 hours/day).
Frequently bend, squat, twist, and reach above/below shoulders.
Frequent use of hands for grasping, pushing, pulling, and fine manipulation.
Lift and carry up to 25 lbs. frequently and up to 50 lbs. occasionally (dry corn, maseca).
Heaviest item carried:
50 lbs. ; longest distance: 10 feet.
Work near cooking equipment, fryers, and tortilla machinery.
Exposure to dust, gas, fumes, heat, and humidity.
May be required to perform tasks at elevated levels (placing or retrieving items).
May drive forklifts, carts, or other moving equipment.

Ability to learn tortilla production from dry corn to finished product.
Familiarity with tortillería equipment, tools, and ovens (or willingness to learn).
Team-oriented with strong communication and customer service skills.
Responsible, professional, and positive attitude.
Basic understanding of English language.
Must be able to transfer to other store locations within a reasonable commute.
Must be legally authorized to work in the U.S.
Exposure to perishable products, cooking equipment, and changing conditions.
Collaborative, team-focused environment.
Must work flexible schedule: afternoons, evenings, weekends, and holidays.
