Shift 3rd ShiftDescription
Responsible to complete HACCP Operational Sanitation verifications for Evisceration, Second Processing, Cooler and Shipping, in conjunction with a thorough visual inspection to identify discrepancies or deficiencies.
Perform on-the-spot corrections by monitoring for proper, immediate resolution to identified problem areas.
Provide direct observations monitoring daily for verification purposes for each of the seven CCP'S.
Conduct hourly records review of Supervisor's Department Operational Sanitation Reports, CCP Monitoring Checks, Ice Melt Tests, Shipping Temperatures, and Paw Temperatures, while ensuring checks are completed and corrective actions completed (if necessary) before product is approved for shipment.
Responsible to shut down any portion of the production line that is not meeting HACCP standards.
Verify all scheduled HACCP Monitors have clocked-in and are present for duty.
Ensure product is in compliance with Safe Food Handling Procedures and meets or exceeds regulatory requirements.
Stamp all documents and maintain all HACCP and SSOP records for the facility.
Requirements
Physically and mentally able to perform the job.
Must be able to follow oral and written orders/instructions.
Should be able to work under minimal supervision and work well with others.
Internal Applicants:
Good previous work and attendance record.
Must currently have 2 or less occurrences & maintain that level.
No write ups in the last 6 months.
Physical Requirements
Plant environment is noisy, wet, humid or cold.
Adequate ventilation and heating is provided to help maintain comfort zone while working.
Adequate overhead lighting is provided.
Hearing protection and protective clothing is required.
All team members work in close proximity to each other and must be able to communicate among the processing line team members, management and USDA personnel.
