Summary
Dining Hall Foreperson assists Head Cook in coordination of food preparation and helps cook buffet style meals for employees/crew/customers. Effective 1 December 2024, Dining Hall Foreperson II residing in Trident housing will be subject to a co‑pay of $15 per day for room and board, for each day that at least 8 hours of work is offered.

Essential Functions

Maintain strict food safety standards and ensure kitchen staff adhere to set standards, procedures, department rules and sanitation requirements.

Ensure all operations meet DEC and OSHA requirements and ensure consistent cleanliness and upkeep of the Dining Hall area.

Lead, train, and support kitchen staff.

Oversee and prepare meals for all shifts. In addition, oversee portion control and presentation, ensuring all meals meet standards for quality.

Manage food orders, inventory, and vendor communication.

Provide hands‑on supervision and oversight for the preparation, cooking, and portioning of meals, while coordinating staffing with operations leadership.

Conduct routine and deep kitchen cleaning.

Coordinate remotely with the Food & Beverage Manager.

Use Microsoft Office and Teams for reporting and communication.

Perform activities of workers as needed.

Perform other related duties as assigned.

Additional Responsibilities

Acquire knowledge of Trident’s Environmental and Safety Policies by completing required training programs and performing designated work activities in accordance with training and procedures/work instructions.

Notify designated personnel of any environmental or safety incidents or risks not previously documented, in accordance with Environmental Awareness and/or safety trainings.

Frequently engage in teamwork.

Occasionally use interpersonal and customer service skills.

Speak and read English.

Employees working in Alaska are advised to have medical insurance coverage which is valid in the State of Alaska.

Required Qualifications

At least 2 years experience in a Chef or Kitchen Lead position.

Preferred Qualifications

3-5 years experience in a Chef or Kitchen Lead position.

One year certificate from college or technical school, one year of related experience and/or training, or equivalent combination of education and experience.

HS Diploma or equivalent.

Knowledge, Skillsets, and Abilities

Catering experience.

Current SERV Safe Certification.

Knowledge of food safety and cleanliness standards.

Proficiency using Microsoft Office Suite including Outlook, Teams, and Excel.

Work Environment (includes travel/on‑call)
This position works in the kitchen where food is prepared and served. This role is subject to standing for long periods of time and must be able to work under pressure in a fast‑paced environment. The noise level in the work environment can be moderately loud. Kitchens are usually crowded and filled with potential hazards such as hot ovens or slippery floors. Kitchen staff must reduce risk by proper PPE; gloves, long‑sleeve shirts, aprons, and non‑slip shoes to reduce the hazards of slips, falls, cuts, and burns.

This position may be required to stand for extended periods and perform physically demanding tasks, such as lifting heavy loads and working in cold environments. The employee is frequently required to climb or balance. The employee is occasionally required to sit; stoop, kneel, crouch, or crawl and talk or hear. The employee must regularly lift and or move up to 10 pounds, frequently lift and or move up to 25 pounds, and occasionally lift and or move up to 50 pounds. Specific vision abilities required by this job include distance vision, peripheral vision, and depth perception.
