Meat Trimmer Position
The primary purpose of this position is to trim and prep a high volume of meat for processing and packing.
Responsibilities include:
Running electric wizard knife to trim blade meat/pectoral/skirts/inside rounds.
Removing vein or nerve from various cuts of meat while maintaining yields and portions.
Using knife and scale to size meat product to exact specifications.
May pull raw material for trimming.
As production demand varies, all Meat Trimmers are expected to have hour and day flexibility.
Perform other duties, as assigned.
Partner with supervisor and FSQA team on product quality issues.
Maintain all work surfaces, tools, and equipment clean and sanitized.
Always follow the USDA, HACCP, SSOP, food and employee safety policies, rules and regulations.
Always follow OSHA and the Ben E. Keith employee safety policy, rules and regulations such as Lock Out Tag Out.
Wear required protective and food safety equipment at all times while in the production area.
Education and/or Work Experience Requirements:
Experience portioning, trimming and/or prepping raw materials with a wizard knife or regular knife.
Able to multitask in a fast-paced work environment.
Excellent communication skills.
Excellent teamwork skills.
Self-starter.
Basic math knowledge.
Physical Requirements:
Ability to safely and successfully perform the essential job functions consistent with the ADA, FMLA and other federal, state and local standards, including meeting qualitative and/or quantitative productivity standards.
Ability to maintain regular, punctual attendance consistent with the ADA, FMLA and other federal, state and local standards.
Must be able to push, pull, lift, and carry up to 80 lbs.
Must be able to stand on your feet all day and work in a cold (32-40) environment.
