Position Summary
Lee’s Marketplace, a family‑owned grocery chain, is looking for an Overnight Production Baker to craft high‑quality, scratch‑made baked goods during overnight hours. The role involves preparing, baking, stocking, rotating, and maintaining inventory for breads, rolls, pastries, cakes, and specialty items, ensuring food safety and meet production schedules.
Primary Duties and Responsibilities
Prepare and bake fresh bread, rolls, pastries, and other baked goods using provided recipes.
Accurately measure, mix, cook, and package products to maintain consistent quality.
Adequately adjust production runs to meet demand forecasts and customer needs.
Maintain proper inventory levels, ordering supplies to prevent shortages.
Follow nightly production schedule to stock shelves by store opening.
Ensure baked goods meet Lee’s Marketplace standards for appearance, texture, and taste.
Monitor batch consistency, baking times, temperatures, and output.
Keep the workstation clean, sanitary, and organized; follow all food‑safety guidelines.
Report low stock or inconsistencies to the Bakery Manager.
Process orders digitally and in writing as required.
Perform other duties as assigned.
Guest Service
Greet guests and teammates courteously.
Answer questions about products and store services.
Promote and exemplify high morale and professional communication.
Assist customers with the Lee’s Marketplace website.
Product Handling
Ensure product freshness by rotating stock and checking expiration dates.
Store perishable items at correct temperatures and dry ingredients in a cool, dry place.
Use FIFO system to reduce waste.
Follow recipes accurately for consistency and quality.
Package goods appropriately to maintain freshness and meet safety regulations.
Label items with pricing, ingredients, allergens, and expiration dates.
Minimize waste and properly dispose of or recycle excess.
Cleanliness and Safety
Maintain a clean and organized work area.
Follow all safety and sanitation procedures.
Store dairy or cream products at proper temperatures.
Use gloves, hand washing, and proper equipment sanitation.
Handle and label allergens to avoid cross‑contamination.
Report safety hazards or equipment issues to the Store Director.
Report injuries or safety concerns in a timely manner.
Adhere to all food‑safety regulations.
Assist with departmental cleaning duties.
Team Collaboration
Work cooperatively with teammates to achieve store goals.
Encourage teamwork and uphold Lee’s Marketplace mission and core values.
Participate in meetings and training sessions.
Assist other departments as needed.
Work effectively in a fast‑paced environment.
Ensure products are sold before expiration.
Attend required meetings and contribute to productivity and revenue goals.

Position Requirements
Age 18 years or older.
Availability during overnight hours, including weekends and holidays.
Food Handler certification required.
Physical Requirements
Stand, walk, twist, sit, and bend for extended periods.
Lift and carry items weighing up to 50 lbs.
Use manual dexterity to handle small objects and equipment.
Repetitive use of hands and arms to push, pull, lift, reach, grip, and balance.
Occasionally stoop, crouch, kneel, or crawl.
Stand and walk for prolonged periods.
Access all areas of the production zone.
Lift from floor to shoulder or overhead repeatedly.
Use step stools or ladders occasionally.
Tools and Machinery
Commercial mixers
Pallet jack, wheeler, trash compactor, ovens/production machines, fryers, slicers/knives, wrapping machine, sheeters, scales, trays, pans, racks, tempering tools, temperature‑controlled rooms, computers, phones.
Education or Skills
High school diploma or equivalent.
Minimum 1 year of baking or commercial bakery experience (preferred).
Knowledge of commercial baking equipment or willingness to learn.
Strong attention to detail and ability to follow recipes accurately.
Ability to work independently and in a team during overnight hours.
Food Handlers Permit or ability to obtain one.
