At Those Vegan Cowboys, we’re rewriting the whole dang dairy playbook.

Armed with microbially produced casein and a whole lotta frontier spirit, we wrangle biotechnology and old-school food craftsmanship into real dairy products that nail the taste, the texture and the pull, no cow required.

Rocket science? Kind of. But just as much a matter of artisanal fingerspitzengefühl. This is why we’re on the hunt for a seasoned Product Developer who knows their way around ripened cheese and gets a kick out of turning science into something downright delicious. Job description
You’ll be at the heart of our R&D work, developing innovative ripened cheese products using next-generation dairy technology.

Develop and refine ripened cheese prototypes (hard, semi-hard, soft and blue cheeses)

Transform microbially produced casein into practical cheesemaking processes

Fine-tune coagulation, acidification, salting and maturation conditions

Keep clear laboratory records to support traceability and reproducibility

Plan and run sensory evaluations

Use sensory feedback and data to improve products

Support and carry out quality control and food safety testing

Help ensure compliance with internal and external food safety standards

Contribute to technical documentation and regulatory materials

Work closely with food technologists, process scientists and commercial teams

Manage several R&D projects with defined milestones and timelines

Adapt quickly to changing ingredients, inputs and priorities

Work both independently and collaboratively across teams

Your profile
You’re curious, structured and proactive. You probably recognize yourself here:

Hands‑on product development in ripened cheeses (e.g. cheddar, gouda, camembert, gruyère, blue cheese)

Degree in Food Science, Dairy Technology, Food Engineering or related

Strong expertise in cheesemaking processes (coagulation, cultures, curd handling, pressing, brining, maturation)

It’s a plus if you also have experience with

Sensory evaluation training or applied sensory work

Alternative dairy and or plant‑based product development

Preparing regulatory dossiers (EFSA, FSA, or similar)

Knowledge of HACCP, GMP, and EU food safety standards

Working in early‑stage or scale‑up R&D environments
