Food and beverage are a primary expression of the guest experience, woven naturally into the landscape, culture, and rhythm of the resort.
The Role
The Director of Restaurants & Bars oversees all dining outlets and beverage experiences across the resort, serving as the operational counterpart to culinary leadership. This role blends
creative vision, disciplined execution, financial fluency, and hands-on leadership . You will shape how guests experience the property through service flow, storytelling, sourcing, beverage programming, and team culture.
This is also a brand environment where
strong F&B leaders are intentionally developed into future Resort Managers and General Managers .
What You’ll Own
Food & Beverage Leadership Lead all restaurant, bar, lounge, and event-driven F&B experiences across the resort Ensure farm-to-table principles, sustainability, and sourcing integrity are lived daily—not just marketed Partner closely with the Culinary Director to align concept, timing, service, and execution Create dining moments that feel intentional, unscripted, and rooted in place
Operations & Financial Discipline Build and manage operating budgets, forecasts, and KPIs across all outlets Balance creativity with labor efficiency, cost controls, and profitability Analyze performance trends across revenue, COGS, labor, guest sentiment, and team engagement Implement systems that elevate consistency without sterilizing the experience
Team & Culture Recruit, mentor, and develop service leaders and future department heads Build a culture of quiet confidence, hospitality intuition, and product knowledge Invest deeply in training, storytelling, and professional development Create succession pathways for high-potential leaders
Guest Experience Maintain exceptional service standards across all dining touchpoints Engage with guests on the floor—table touches matter here Translate feedback and guest data into meaningful operational improvements
Compliance & Standards Oversee food safety, sanitation, and alcohol service compliance Ensure all outlets meet regulatory and safety standards consistently
Who Thrives Here 7–10+ years in progressive F&B leadership within luxury resorts, boutique hotels, or chef-driven environments 5+ years leading multiple outlets with diverse teams Strong command of wine, spirits, cocktail programs, and beverage storytelling Financially fluent without losing soul Calm, grounded, and hands-on—this is not a desk role Comfortable with evenings, weekends, and seasonality
Systems Experience:
Lightspeed, Resy (or similar platforms)
Certification:
ServSafe (or ability to obtain), Court of Master Sommeliers, Certified Sommelier, WSET
