Bakery Commissary Director
Edgar's Bakery and Café, Birmingham, AL, United States
Edgar’s Bakery — Central Commissary Operations
Own and Scale the Heart of Our Production Operation
We’re looking for a hands‑on, high‑impact leader to run the heart of our operation — our central commissary.
This role is responsible for ensuring every product that leaves our facility meets the highest standards of quality, consistency, and execution across all locations. You’ll lead production, people, and processes while driving efficiency, reducing waste, and supporting continued growth.
You’ll be stepping into a strong foundation — a highly capable, committed team with deep experience and long tenure.
This is a group that takes pride in their work and cares about the product, giving you the opportunity to lead, develop, and elevate an already exceptional team.
This role will also play a key part in the development and transition to a new commissary facility, helping design systems, workflows, and infrastructure that will support the next phase of the company.
If you thrive in fast‑paced environments, enjoy solving real operational problems, and take pride in building systems that scale — this role is for you.
What You’ll Own Production & Execution
Run day‑to‑day commissary operations with a focus on accuracy, efficiency, and consistency
Build and manage production schedules based on real demand
Improve throughput, reduce bottlenecks, and drive efficiency
Quality & Standards
Ensure consistent, high‑quality products
Set and enforce clear product standards across all categories
Quickly identify and correct quality issues
Food Safety & Compliance
Own and further develop HACCP and all food safety programs
Maintain compliance with all regulations
Lead a culture of safety, cleanliness, and accountability
Team Leadership
Hire, develop, and lead a strong production team
Set clear expectations and hold people accountable
Build future leaders and strengthen bench depth
Systems & Process Improvement
Create and refine SOPs that actually get followed
Identify inefficiencies and fix them
Build scalable systems that support growth without sacrificing quality
Distribution & Logistics
Ensure accurate, on‑time delivery to all locations
Improve packing, staging, and delivery workflows
Purchasing & Inventory
Manage inventory to avoid both shortages and waste
Strengthen vendor relationships and control costs
Equipment & Facility
Oversee maintenance, repairs, and equipment improvements
Identify and implement upgrades that increase output and reliability
Product Development
Help bring new products to life — from concept to scalable production
Ensure new items can be executed consistently at volume
New Commissary Development & Transition
Play a lead role in planning and executing the transition to a new commissary facility
Help design production flow, layout, and operational systems
Partner with leadership on equipment selection, capacity planning, and scalability
Ensure a smooth transition with minimal disruption to production and store performance
What Success Looks Like
Stores are fully stocked with consistent, high‑quality product
Production runs efficiently with minimal waste and rework
The team knows what’s expected and executes without constant oversight
Problems get solved quickly — and don’t repeat
The commissary is built to scale as the company grows
The new facility is designed and launched with strong systems, flow, and execution
Minimum Requirements (Non‑Negotiable)
5+ years leading operations in a high‑volume food production environment
(Commissary, manufacturing, large‑scale bakery, or similar)
Direct responsibility for teams of 25+ employees
in a production setting
Proven experience managing
daily production at scale
Strong working knowledge of
food safety systems (HACCP, audits, compliance)
Experience building and enforcing
SOPs, production schedules, and quality standards
Demonstrated ability to
improve efficiency, reduce waste, and solve operational bottlenecks
Comfortable being
hands‑on on the production floor daily
Who You Are
A proven
operator , not just a manager — you’ve run complex production environments at scale
You
own outcomes , not just responsibilities
You can walk into a messy operation,
identify issues quickly, and fix them
You’re comfortable making decisions that impact
production, people, and performance daily
You hold a high bar and
don’t let standards slip — ever
You lead from the front and
earn respect through action, not title
Why This Role Matters This isn’t a maintenance role — it’s a build‑and‑improve role. You’ll have a direct impact on product quality, store performance, and the future infrastructure of the company.
