Pastry Chef
We are seeking a reliable and detail-oriented Pastry Chef to prepare high-quality baked goods and desserts while maintaining a clean, safe, and efficient kitchen environment. You will produce a wide variety of pastry items according to standardized recipes, support daily food service operations, and uphold strict food safety and quality standards. Responsibilities
Prepare high-quality pastry and dessert items according to standardized recipes and production schedules, including accurate portioning, presentation, and temperature control
Produce a broad range of items such as streusels, cheesecakes, tart shells, pull-apart rolls, sheeted dough using a dough sheeter, crostatas, coffee cakes, cookies, brownies, blondies, large-batch doughs (up to 100K batches), ice cream and sorbet, cupcakes, layered sheet cakes, glazed sugar cookies, and other assorted pastries
Taste all prepared items to ensure consistent quality, flavor, and texture before service or delivery
Follow established ticket collection procedures and maintain accurate records of production and service
Clean and sanitize all kitchen and pastry areas, work surfaces, tools, and equipment after food preparation and service
Properly store, label, and rotate ingredients and finished products, and discard excess food in accordance with safe food-handling procedures. Keep refrigerators, freezers, and storerooms clean, organized, and compliant with storage and food safety standards
Operate and maintain kitchen and pastry equipment safely and according to manufacturer instructions and company procedures
Assist with production planning, including forecasting, batch preparation, and scheduling of pastry items
Support record keeping and reporting related to production volumes, waste, and inventory as needed
Assist with ordering and receiving food and supplies, checking for quality, accuracy, and proper storage
Report maintenance needs, faulty equipment, safety concerns, or accidents immediately to a supervisor
Attend required in-service and safety meetings and apply the information to daily work practices
Perform all duties in a safe manner, maintaining a clean, organized, and hazard-free work area at all times.
Follow HACCP standards for food safety, including proper handling, presentation, portion control, and temperature monitoring and documentation.
Adhere to company policies related to personal protective equipment, including using a medium-weight cut glove when handling knives, peelers, choppers, mandolins, or slicers
Essential Skills
Basic knowledge of food preparation and pastry production, including baking techniques and dessert assembly
Ability to follow standardized recipes, formulas, and portioning guidelines accurately and consistently
Strong attention to detail, particularly in relation to product quality, baking times, temperature, and visual presentation
Ability to operate and maintain kitchen and pastry equipment safely, such as mixers, ovens, sheeters, and slicers
Understanding of HACCP standards and general kitchen safety procedures, including temperature control and cross-contamination prevention
Good organizational skills for storing ingredients and supplies and maintaining clean, orderly work areas
Ability to work efficiently and stay focused in a fast-paced, high-volume production environment
Strong communication and teamwork skills to collaborate effectively with other cooks, bakers, and kitchen staff
Reliability and commitment to maintaining a safe, clean, and compliant work environment
Ability to follow company policies regarding the proper use of gloves, protective gear, and slip-resistant footwear
This is a Permanent position based out of Brooklyn, NY. The pay range for this position is $21.00 - $26.00/hr.
