The Junior Sous Chef supports the Sous Chef and Executive Chef in food preparation, kitchen management, and team supervision. This role helps maintain high culinary standards, ensure kitchen efficiency, and contribute to menu development while maintaining all safety regulations.
JOB RESPONSIBILITIES
Assist in preparing and cooking high quality dishes
Ensure food is prepared and presented according to the company standards
Monitor food stock levels and assist with inventory management
Assist with menu planning and recipe development
Ensure consistency in taste, portioning and presentation
Supervise kitchen staff in the absence of leadership
Train and mentor kitchen staff
Ensure all food safety regulations are followed
Oversee proper storage and handling of ingredients
Ensure kitchen equipment is properly maintained and report any issues
Assist in ordering and stock rotation while maintaining food quality
Other duties as assigned
QUALIFICATIONS
Proven experience in culinary leadership
High school graduate and an apprenticeship, cooking school or culinary institute education.
Leadership and team management skills
Strong understanding of cooking techniques and food safety standards
Must be comfortable with food and labor costing, menu development, and training.
Ability to multi-task in a fast-paced, high pressured environment.
Requires ability to operate computer equipment and other food & beverage computer systems.
Requires the ability to operate and utilize culinary production equipment and tools.
Strong organizational skills.
Requires reading, writing and oral proficiency in the English language.
Prior high volume culinary line experience
Ability to remain calm and work well in a fast-paced, high-pressured environment
Ability to communicate clearly and effectively
Commitment to delivering exceptional service
Ability to partner with coworkers in a team environment
Must be able to multi-task
Requires reading, writing and oral proficiency in the English language.

HOUSING
The Catalina Island Company offers housing as an option for eligible employees at a subsidized rate. Employees are responsible for paying a portion of the housing cost, typically deducted through payroll.
LOCATION
Must be able and willing to relocate and reside in Two Harbors on Catalina Island, CA
PAY TRANSPARENCY
The pay scale for this position ranges between $27.00-$30.00 per hour depending on the work location and experience level. The pay is the hourly rate.
WORK ENVIRONMENT/ PHYSICAL REQUIREMENTS
This position works in a busy restaurant environment that can be warm, noisy, and fast-paced. This role involves indoor and outdoor environments. Must be comfortable and able to stand for up to 6-8 hours per day. Must be able to lift up to 40 lbs. Requires dexterity, grasping, writing, standing, sitting, walking, repetitive motions, bending, listening and hearing ability and visual acuity. Talking and hearing occur continuously in the process of communicating with guests, management and team.
